The coffee is almost 98% water, in general, espresso machines incorporate water tanks that you will find in the back with an opening to access and fill with water. Other models give you the possibility to connect them directly to the waterline. In one way or another, the important thing is that it must be filtered, fresh and quality water.

3. Grind the coffee beans.

The grinding of your coffee beans is one of the key factors to obtain a perfect cup of espresso, in fact, for a coffee professional, it is decisive to invest in a good coffee grinder, even more than in the espresso machine.

This is because the coffee grinder must allow the grind to be adjusted, as well as deliver a consistent and homogeneous ground coffee in each dose.

4. Load the coffee filter holder.

With ground coffee, you must now load the correct dose for proper extraction. By this, I mean that for each type of espresso a different amount of coffee is needed, for a standard espresso you usually use 7 – 10 grams of coffee, while for a double espresso you would use 14 – 18 grams. To control the grams of coffee, it is very useful to have a gram scale.

5. Leveling and pressing the coffee.

Now you want to distribute the coffee evenly, for this, you just have to tap it with your palm on each side of the portafilter to level and remove the air that has remained under the grind.

Once you have the ground coffee correctly distributed, what you should do is press it with the help of your coffee tamper. For this, you must place your arm at a 90-degree angle and press down firmly until you feel that the coffee is compacted.

If the extraction comes out too fast, it means that the press is not firm enough, or that you have ground the coffee too coarsely. What happens is that the water passes very quickly through the coffee bar causing a sub-extraction effect.

And if it takes too long, then it means that you have pressed more than necessary, or that the coffee grounds are too fine. Causing the opposite effect, over-extraction because the water takes longer to pass through the coffee bar.

The ideal is to achieve a homogeneous and consistent extraction creating a balance of flavors in your espresso. Practice, practice, and practice again and you can find the correct technique.

Some final advice is that you should not do a double pressing, that is, compact the coffee and then press again, you should not hit the filter holder once the coffee is compacted, otherwise you could create cracks in the tablet allowing a sub-extraction of coffee.

6. Extraction of your espresso.

Finally, it is time to prepare that glorious espresso, for this you must place the portafilter in the group of the machine and start the extraction process with the start button or lever. Here you will need to control some factors such as time, it is recommended that for a simple espresso, you should be able to get 2 ounces in a range of 25 to 30 seconds.

5 Steps How to make the perfect espresso.

Make an espresso is not that difficult, even if you’ve never ventured to take one of these shots loaded with pure caffeine, let me tell you you drink a lot, as the basis for most of your favorite coffee drinks, such as the cappuccino or latte, are made from espresso  ☕.

However, being able to extract all the flavors and aromas so characteristic, and in an almost perfect way, is a complicated task, since to achieve this balance you will need to create the ideal environment to be able to extract the perfect espresso.

Assuming that you have already read how to use an espresso machine? We’ll go straight to the espresso extraction, so follow these 5 basic steps, plus some helpful tips, so you can be successful with your first espresso.

1. The right dose of coffee.

Remember that the degree of ground coffee is crucial to obtain the correct espresso. If the grind is too fine, you will have a burnt taste. Otherwise, if it is too thick, you will have a watery and tasteless coffee.

The amount of coffee that you put in the portafilter can vary but the most standard measurements are 7 grams for a simple espresso, 14 grams for a double, and 20 grams for a triple one.

It is also important to have fresh and freshly roasted coffee to ensure maximum extraction of all its properties.

2. Rinse the group from the machine.

Before starting with the extraction, it is important to clean the head of the group to eliminate impurities such as old coffee residues, for this, just let water pass without the filter holder in place. By rinsing the group you are also making sure to heat properly to have a uniform temperature during extraction.

You can also preheat the portafilter without any coffee, this is called a blank shot.

3. Extraction and time of espresso.

After loading and compacting the coffee inside the portafilter, start the extraction immediately, otherwise, the heat of the machine group could burn the surface of the coffee, which produces unpleasant notes in your cup.

The preparation time of espresso is between 25 – 30 seconds from the moment you start the extraction. Also, the espresso should start to fall into the cup after 5-7 seconds.

The best indicator that you have done a good job is the crema of your espresso, ideally a hazelnut cream with texture. If the extraction was too fast you will have a pale and thin cream, if it has been very slow, you will have a dark cream.

4. Serve and enjoy.

A step before the entire extraction process is to preheat the cup, with this you will ensure that the material, ceramic or glass, is at the same temperature as the espresso and that your drink does not get cold. For this, you just have to rinse the cup with hot water from the machine.

5. Clean up and start over.

It is important to keep your place clean and tidy, especially if you have a cafeteria. Throw the coffee grounds or tablet into the grinder, clean the filter holder with a clean cloth, and rinse the head of the group again, in this way it will be much easier, faster, and more pleasant to make your next espresso.

How to clean an espresso machine.

Rigorous and constant maintenance is a fundamental part of having an espresso machine for correct operation and prolonging the life of the machine, as well as maintaining the flavor and quality of your coffee in each extraction as if it were the first time.

These are the essential aspects of a basic cleaning that you should perform to your espresso machine, some on a regular and daily basis, and others from time to time.

1. Clean the filter holders and filters.

You must make sure that the filter or the portafilter with coffee deposits are not dirty, otherwise, it will cause undesirable flavors in the drink.

This can be corrected with a  stainless steel sponge and hot water. You should clean and rub until any dirt is removed.

We advise you not to use cleaning products with aromas, since these smells could be transferred to the cup of coffee giving very unpleasant flavors.

2. Clean the vaporizer tubes or lancet.

It is important that after heating the milk and removing the jug, open the steam tap again to expel the accumulated milk inside the circuit, in addition to using a damp cloth to clean the milk that remains on the outside of the lancet.

It is also advisable to clean the outlet holes of the frother with a needle to prevent the milk from obstructing the passage of the vapor.

3. Cleaning the tray.

Another maintenance that you must carry out is cleaning the tray, for this, it is important not to throw the coffee grounds or other waste in the drain of the machine. Besides being very unpleasant to look at, finding a dirty tray.

4. Cleaning the body of the machine.

For this, just use hot water and a cloth, you must clean all the parts that could get dirty throughout the day, or during the workday.

5. Cleaning the group and the shower.

This should be weekly maintenance since if these outlets are dirty and clogged, they will produce a soft and bitter drink. The maintenance of the group consists of removing the pieces, and as you did with the filter holder, you should clean the area of any sediment of coffee.

The fall of the water in the showers must be uniform so that it generates a whirlpool allowing all the coffee loaded in the portafilter to be moistened.

For this you must use the backwash, this consists of placing a blind filter in the filter holder and then simulating as if you were making a coffee. This generates a circulation of water in the group that will clean the shower by releasing the rest of the coffee sediments stuck to the group.

As baristas we are used to using the espresso machine, we use its external parts as a consequence of what happens inside the machine. 

But do we really know how an espresso machine works? 

Before we go on to understand this, we must know more about its parts and how they work. 

This is the first collaborative article in the history of Soy Barista and it is a glossary based on the basic operation of an espresso machine and not on new technologies (we will save that for later). This article would never have been achieved this way without the support of a coffee machine technician.

Group head: 

 Anyone can control it using the group button that allows the solenoid valve to open and the water to pass through. 

Filter holder:  

The part of the machine that contains the filter and that is placed inside the group to receive the water that will be transformed into an espresso. 

Portafilter Spring –  

A small spring that holds the baskets in place. So it is held in the portafilter if you attach it to a groove on the inner surface of the portafilter body. 

Basket or Filter –  

You can locate the filter inside the filter holder. These come in double and single sizes and their diameter depends on the model of the espresso machine. The most common is the 58mm one and the compactor choice is based on this.

Group packing: 

It is the packing that seals the portafilter and the group head. Besides, it is inserted into a slot that is built into the group. If the portafilter is leaking, the group gasket is usually the part that needs to be replaced.

Jet breaker:  

located within the group, it works together with the dispensing shower to distribute the water. 

Delivery shower: 

You can locate it inside the group, it is responsible for evenly dispersing the water for the preparation of espresso. It is a bad shower that will inevitably result in inconsistent espresso. 

Group switch:  

The button that sends an electrical signal to the group’s solenoid valve, allowing the water to flow towards the group head. 

Hot water dispenser:  

literally that’s its function too, to dispense hot water from the boiler. 

Power switch: 

You can turn the power switch and the selector to turn on the espresso machine. There are two steps and are marked with numbers. First to fill the boiler with water and then turn on the resistance and start heating.

Water level sight glass:  

located on the front of the machine and indicates the water level in the boiler.

Lancet:  

you can use the tool to steam milk.

Lancet tip:  

It can disperse the steam that allows you to steam the milk. It can have from 1 to 5 holes.

Water pump: 

It is composed of the water pump and the motor, they can be vibratory or rotary. It is responsible for reaching the right pressure for preparing the espresso (8 to 10 bars).

Boiler:  

The tank where water and steam are stored. 

Boiler resistance: 

You can boil it in charge of heating the water and generating steam in the tank or boiler. 

Steam key: 

It is the key that activates the steam output to the lancet.

Cup warmer: 

The surface on top of the espresso machine intended to preheat cups.

Water level probe:  

Controls the water level. Normally it should contain around 50% to 60% water and the remainder steam.

Pressure switch: 

At first, it controls the pressure and temperature of the boiler, which are directly related.

Boiler safety valve:  

Triggers at 1.8 bar pressure to protect the equipment from an eventual accident. If the valve trips once, it must be replaced. 

Vacuum or relief valve: 

This is the vacuum or relief valve that equalizes the internal pressure of the boiler with the external pressure to avoid false pressure readings.

Water supply hose:  

The one that leads the water from the pipe to the machine. It has to be odorless and tasteless food grade.

Drain hose: 

The hose that discharges the excess water from the coffee machine.

Liquid waste tray:  

Connected to the liquid waste hose, it is responsible for directing them to the hose.

Boiler filling solenoid valve:  

It opens the water flow to the boiler. It opens when the level probe indicates a lack of water and once it has the proper water level, it interrupts the signal.

Group solenoid valves:

 It is the one that allows the flow of water to the head of the group.

Unidirectional boiler and group valve: It allows the passage of cold water and does not allow it to return once hot. 

Steam pressure manometer: 

So, it is the one that registers the levels of steam pressure that should be between 1 and 1.5 bars.

Water pressure gauge: 

Besides, it is the one that registers the pressure levels generated by the motor pump, which should be 8 to 10 bars.
